Ask Bianka where dinner should happen and the answer arrives before the question has finished. She stands 165 cm, softly curved, unhurried on a heel. The light brown hair falls past her shoulders and turns to something close to gold at the ends, and the hazel eyes warm up the moment a candle is lit near them. An evening with Bianka

Dinner is booked for eight and she arrives already dressed for it, which settles the tone before anyone has opened a menu. The first twenty minutes go on the wine list, some of it teasing, none of it showing off, and she will ask what you actually like before she suggests anything. Two dishes you did not order appear in the middle of the table because she wants you to try them.

By the time the plates are cleared the room has grown louder and she has grown quieter, which is her favourite part of any evening. What follows is open: a walk through the Piazza while it empties, a nightcap somewhere with a low ceiling and no music, or the hotel bar while it is still serving. Whichever you choose, she will not be the one checking the time.

Something old and beautifully made. Silk if the room is warm, wool crepe if it is not, and always a colour that agrees with candlelight.

Tomatoes cooked down for hours with too much garlic. My grandmother never wrote any of it down, so I had to learn it standing at her elbow.
